Banana Walnut Cake

 Ingredients

1/3 cup butter, softened

1-1/3 cups sugar

1/4 cup water

2 eggs

3 medium bananas, mashed

1-2/3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 tsp cinnamon

1 tsp mixed spice

 Topping:

1 Tablespoon sugar

1 teaspoon cinnamon

1 cup coarsely chopped walnuts

Method

1.      Beat together butter, sugar, water, and eggs.

2.      Stir in bananas.

3.      In a separate bowl, combine flour, baking powder, soda, 1 tsp cinnamon and 1 tsp mixed spice.

4.      Stir into banana mixture just until blended.

5.      Spread batter into a well-greased and floured 9 X 12 inch pan or 10-inch tube pan.

6.      Sprinkle batter with cinnamon and sugar mixture.

7.      Top with walnuts and press lightly into batter.

8.      Bake at gas mark 3/ 160 C/ 325 F for 40 to 50 minutes or until a wooden toothpick inserted in center comes out clean.
